Figgy Flatbread!

In class tonight we learned a delicious new flatbread that will tie in nicely with last weekend's post. Keep in mind that if you don't want to make the pizza dough, a great alternative is a soft tortilla shell. You crisp it in the oven first and then top it and put it back in the oven for the cheese to melt. It makes a great personal pan pizza!

Our local farmer, Third Day Farms, handpicked 3 variety of figs today and brought them to class tonight. They were amazing! Such a delicious taste and so different than any I've had from the store before. Check out your area and see if you can find some freshly grown figs!!! 

Recipe:
If you use the pizza dough recipe then make up 2 balls of dough and grill each one on a hot griddle. Brush them with olive oil and garlic after removing from the grill. 

Top the pizza with the following ingredients:
4 ounces of prosciutto, thinly sliced (you can substitute any type of pork/ham here)
8 fresh figs quartered
1 cup goat cheese, crumbled
2 cups arugula
Drizzle balsamic on top (can be a glaze or a thinner sauce or a vinegar)
